A sweet and fruity twist on a traditional summer soup. And, look at how many ingredients are available at the Market! You can’t get any cooler, or fresher than this.
Ingredients
- 5 cups watermelon*, seeded and cut into chunks
- 1 1/4 cup diced apple*, tossed with 2 Tablespoons lime juice
- 1/2 cup diced red onion*
- 1/3 cup diced sweet pepper*
- 1/2 cup diced cucumber*
- 1 cup chopped tomato*, peeled with a vegetable peeler, and seeded
- 1/3 cup chopped basil*
- 1/3 cup almond, ground very, very fine
- 1 Tablespoon sherry vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon chili powder
Procedure
Puree the watermelon in a food processor. Add ground almonds, sherry, salt, pepper and chili powder. Mix well. Add apple, onion, sweet pepper, cucumber, tomato and basil. Mix well. Chill for several hours before serving.
